Fried Squash

Zucchini and Squash breaded and fried-What a nice treat for a Sunday afternoon.
You will need:
Zucchini(cleaned, dried, and cut into half inch thick slices)
Squash(cleaned, dried, and cut into half inch thick slices)
Flour(enough to coat the slices)
Two eggs(beaten)
Breadcrumbs(enough to coat the slices)
Salt and pepper to taste
Oil(for frying the slices)
Dutch Pot(or fry pan. I use a Dutch pot to minimize oil splatters)

Set oil to heat in pot on low setting, while your breading the slices.
Coat the slices with the flour. Dip into egg, then into the breadcrumbs.
Cook at Medium to Medium/high setting for two-three minutes each side, or until golden brown.
Place paper towels on a baking grate, and place cooked slices in single layer to cool.
Allow To Cool until just warm. Enjoy.
